AKIYAMA - New Sushi Bar & Grill
Brand new place opened up recently in North Boulder so of course I had to check it out. I can't comment on the service since I opted for take-out, but I did find it interesting that the hostess had a lovely British accent.
Their prices are a little high for this neck of the woods - Sushi a la carte is one piece per order with Ebi, Salmon, Yellowtail, Tako or Tombo @ $2.25; Kani @ $2.00; Kaibashira and Ikura @ $2.75... I can't imagine paying $5.00 for 2 pieces of Unagi. Call me cheap. I can take it.
I didn't see Sunomono Salad on the menus so I asked. The waiter that was helping me asked the Sushi Chef, but described it as the full seafood type - shrimp, octapus and crab. The Chef suggested a price of $8.95. Is it just me or is that a big OUCH! ??? They get major points for 1) Asking if it's available 2) Offering to make it up for me. That's customer service and a very promising sign.
As I was leaving a couple was walking in and I thought "OH! I can do an On The Street Interview!" The couple had been there the weekend before and were back because they felt it was good. I asked their opinion about the prices and they said the prices were similar to other sushi bars. (hmm)
This is what I ordered (and it's what I actually received - the waiter had stapled my bag closed before giving it to me so I was unable to check that everything was in there):
Kani Salad!!! I had a recent inquiry into the recipe for Kani Salad - it seems in New York this is quite popular. I had to guess on the recipe based on what I was told, but when I saw this on the menu I had to try it. I also had to email my questioning visitor and correct my recipe error! If you don't know about it, Kani Salad is a simple appetizer that's really easy to make and gives you a mouthful of slightly spicy crab with every bite. The recipe isn't exact, but use your taste to guide you: Shredded Imitation Crab, add small slices of cucumber, then mix with Kewpie Mayo, but go light to begin with! The flavor of crab is delicate so you don't want to over power it! Add a couple of drops of Srircha Hot Chili Sauce to start and adjust to taste. Mix in a little (start with one teaspoon) of Masago (little crunchy orange roe). Make sure the masago is fresh!
Ok, where was I....? Oh yes, I liked the Kani Salad. I haven't had so much crab in a while and crab is one of my favorites.
I also ordered a California Roll for my kids, Oshinko, Tamago, Alaska Salmon w/ Avocado, and Spicy Tuna Roll.
California Roll was a little heavy with the avocado.
I wasn't overly impressed with the Alaska Salmon Roll, but I'm not sure what was wrong with it. Maybe too much avocado again, but I can't be sure.
The Spicy Tuna was good, although I like alot of heat and I would request it hotter next time. (It's really hard to mess up a spicy anything roll...)
The Oshinko consisted of Burdock and Daikon only (oh there was a grated beet garnish that was very dry). The Daikon had an odd taste, or it was a brand I have not tried. Either way I didn't like it.
If you've read my website you'll know that traditionally in Japan the first time you visit a new restaurant, you ask for a tamago sample - it is an art to make it well, therefore, it is a testament to the quality of the food served. Well, I wasn't impressed with the tamago - it was crispy on the outside and not quite cooked all the way on the inside. Can they make it better than me??? Oh yeah! It's really hard to do and it's easy to mess it up.
In summary, I will return to Akiyama to check out different foods and the service. Stay tuned....

So when was the last time you were at Akiyama? This place is incredible, and did you see the lovely review in the Daily Camera? Fantastic sushi as well as items from the kitchen, décor is wonderful, a sweet waitstaff and nice background jazz music (live on occasion). I encourage you to give it another try…it’s certainly the best in Boulder!
Actually I was at Akiyama just last night! Time for an update - thanks for the reminder :-)
Akiyama has been experiencing some growing pains over the past 2 months, but I have faith they will survive AND thrive! This place is a diamond in the rough... Now that they have more frequent customers, the fish has been delectably fresh every time I've been there. I'm a regular (as often as my kids allow) and now that Kei is the sushi chef I am a very happy camper!
I suggest a special roll, not always available, it's called Fire On The Mountain. Trust me and try it. (I now offer Soy Wraps for sale at my website if you're looking for them) A wide variety of Sunomono Salads are available, although I don't think they have the New York Style Kani Salad (bummer!) Another must-try is the Kanpachi w/Japapeno Peppers and the new Akiyama Sashimi Special (chef's choice - Fantastic!!!) If you like Ume, I highly recommend the Umeshiso roll.
The wait staff is very nice and the decor is hip and classy (oh my gosh you have to check out the bathroom!)
If you're looking for very good quality sushi in a very nice environment, and you have the time and patience to sit back and relax, I highly recommend Akiyama! They're currently short on Sushi Chefs, so sometimes it may take a while to get your food from the bar - but it's Well Worth The Wait! Order some edamame and tempura to curb your hunger pains...

Really? Those prices raise an eyebrow? They seem pretty in-line with other sushi restuarants I've been to. They have some pretty decent lunch specials and they seem to use a lot of fish compared to what I'm used to. Their nigiri seems a bit pricey to me but not ridiculously so.
Speaking of Boulder sushi you might want to check out Whole Foods. Their sushi isn't great compared to Japanago at its best or Akiyama but it's a LOT better than supermarket sushi has a right to be. If you need a quick sushi fix it's worth looking at. There's also a new place down on the corner of Arapahoe and 95th street wayy out near Louisville. They're in the same building as a Steakhouse over there. I haven't tried them yet but I'm planning on heading down there in the next couple of weeks to see how their sushi is.

The sushi bar over at Arapahoe and 75th is called Sushi Mara. I visited there over a year ago (or maybe longer...). Do you wonder why I didn't post anything about it? Because at the time I was so unimpressed it would have been too harsh of a review to post. But hey! You brought it up, right?!?!
It's been so long I can only remember a few things, but it was enough to make an impression that has caused me not to visit again. They did not know what Sunomono was. The Edamame was rock hard and ice cold. The sashimi was not fresh (standard: tuna, yellowtail, salmon). And the sound of children banging their chopsticks on the tables drove me a little whacko.
BUT! That was a while ago. And I AM the Sushi Snob and it takes alot to impress me. But if I feel I could have made it better myself at home, I just can't recommend a place.
So Bruce, please let us know what you think after your visit to Sushi Mara!
Prices in general have really gone up. I guess I should be happy that we don't have to pay Las Vegas Sushi Bar prices here in Boulder!
I also recommend Sushi to go from Whole Foods... I mean think about it... they have some of the freshest fish around! Life has become so hectic I now stock my pantry with Nori, Soy Wraps, Lindberg Sushi Rice, Su, Umeshiso paste, dried seaweeds; And my frig always has burdock, cucumber, imitation crab, and my latest must-have is UmeShiso Paste and Yuzu Paste! I'm hoping to get over the Whole Foods for some excellent fish and try out the Yuzu paste.... Oh man, now I'm hungry!

Actually I'm going to rave about Akiyama some more. A while back I wasn't too sure about them but they have hit their stride and I'm going to go so far as to say that I think that Akiyama is the best sushi in Boulder. Pricey, possibly, but their quality is consistently good and they often have some specials that will knock your socks off.
OK here's the trick to Akiyama -- ask 'em what the specials are when you walk in the door. The New Zealand red snapper is absolutely incredible and it's not listed on their sushi menu. My co-workers get it so often that there's a pretty steady supply coming in now but they don't always have it. They get it in fresh on Tuesday or Wednesday and the pricing is variable based on how fresh it is, so do ask in advance. Once you've had it you don't really need to ask anymore, though. You just want it no matter what the price is!
The other big thing they've been having lately is Toro. Now this stuff truly is awesome! It's also truly expensive so I'm not always getting it, but at least a couple of times a month I'll splurge on it.
It's also worth asking what's good in there other than the specials. It seems to be the nature of sushi that oftentimes one fish will truly stand out that day. Though we did that last night and they said "Everything." Not believing them we ordered a little of everything and you know... they were right! So we had to order a little more of everything (Dropped 60 bucks each when we were done but I don't regret it, not one little bit!) I liked the yellowtail a bit more, my co-worker liked the tuna a bit more and we both got a ridiculous amount of that snapper (Enough to make the chef go "Are you SURE?!" to the waiter.)
Geez it was good... I might have to go back tonight!
Do they offer a full bar?
Although I have only ordered sake, they do have a full bar. Just went again the other night and the food was great!
I'm in New York and am looking for a sushi GRILL bar. One that they make/cook the sushi in front of you with a grill. I've seen one in Florida where they're cooking/frying things in front of you with a hot plate and was half entertainment.
Any ideas?
What you're looking for is called teppanyaki. Benihana is the most famous restaurant chain known for its teppanyaki, but many sushi and Japanese restaurants are doing this too.
You'll need to do a search for it in your area since I'm not familiar with any in New York.
If you come to Las Vegas, where I'm now located, you must visit Osaka http://www.lasvegas-sushi.com/ for its fresh sashimi and a fantastic grill :-) They're located just off The Strip and also south in Henderson (my personal fav!)
